Super-easy Mediterranean bowl

Lately, I've been obsessed with this great new Mediterranean place that opened up near my work called Cava Grill. They are kind of like the Chipotle of Mediterranean food, except instead of burritos and tacos, you can make custom yummy pitas and bowls.

The best part is, Cava Grill has SO MANY OPTIONS and let you add several types of dips and spreads. I always order a bowl with super greens, lentils, chicken, hummus, tzatziki sauce, pita chips, cucumber salsa, and yogurt sauce. Sounds delicious, right?

It is. So delicious, in fact, I wish I could eat there every day. If only....

Since my wallet can't support me eating out all the time, I thought I'd take a stab at making a Mediterranean bowl myself. And let me tell you, it was the EASIEST THING ever to make and tasted so great. 

My bowl is a bit different than the one I always order at Cava Grill, but it is still so delicious. To make this bowl, I found all my ingredients from Trader Joe's, which was super convenient. 


  • Trader Joe's tempeh (1/2 of package)
  • Handful of kale 
  • Small handful of Trader Joe's shaved brussels sprouts 
  • 1 tablespoon of Trader Joe's tahini sauce
  • Scoop of Trader Joe's hummus dip 
  • 1 tablespoon of Trader Joe's goddess dressing (optional) 
  • Half a cup of Trader Joe's lentils (pre-cooked)
  • Half an Avocado



Chop up half of the package of tempeh into small bite-sized pieces. Cook on the stove with a bit of oil until browned. 

Take a half cup of lentils and microwave until hot (you can also eat them cold, but I prefer heating them a bit).

Wash and dry a handful of kale and put it in a bowl. Add a small handful of shredded brussels sprouts. Drizzle goddess dressing if desired. 

Cut half an avocado into small pieces and add to the bowl. Add tempeh and lentils. Add a scoop of hummus. 

Drizzle tahini sauce over all ingredients in the bowl.
